Goals & Future for Burst of Sunshine!



With the new year HERE I feel it is completely natural for all of us to stop and say “Hey, I want to make some goals, and I want to CRUSH THEM!”

I am definitely one of those people who at this time of year get completely inspired to set new goals and resolutions (and despite the odds of what people say about making resolutions and never sticking to them,) I want to accomplish them all!

So I just wanted to throw a quick little post out there about Burst of Sunshine…Goals for the new year!


1. New Content!

First of I am going to start off with the content I post. Lately I have been posting a lot of baking related content, which is fine and dandy and all. I love to bake, I usually regularly have to make cakes for people so it’s something convenient for me to post…HOWEVER, DIY & Craft is my real passion. When I started this blog it was because I wanted to express my creativity and do DIY’s freely and feel like maybe someone else could learn a thing or two as well or maybe learn from my crafting mistakes (as I do make a lot of them). So for the future of Burst of Sunshine I would definitely like to incorporate more DIY’S. I know a lot of my following is because of Cake and Baking and once I start transitioning over to DIY’S and Crafts I probably will lose a huge amount of following but I want to follow my passion and it has always been Crafting!

2. Gain Followers/Subscribers!

Everybody has to have a goal right?! I have a Youtube Channel which you should already know if you follow my Blog. It is slowly growing and I look for it to lose some Subs once I transition to crafts…but, I would like to reach 500 Subscribers by the end of 2017. Originally my goal was 1,000 but I decided the best way to really achieve your goals is definitely make them realistic. I have about 268 Subscribers as of right now, but again as I mentioned I look to lose a few when I stop posting all baking video when my subscribers that are there to see the baking see that I am changing it up. So realistically, with only 268 Subscribers (Which I am thankful for each and every one), 1,000 Subs just seemed pretty unrealistic. So 500 Subscribers is my goal for 2017!

3. Editing Improvement & Video Quality!

I definitely would like to get a tad more experienced and *fancy* with my editing. I have basic minimal editing skills which I would definitely love to improve on. Maybe buy a much better editing software, learn some tricks and skills, and be an editing master! I also would love to be able to provide you all with the most quality pictures and videos I can, which to do I need to definitely step up my game with staging photo’s and videos!

4. Blogging Regularly!

I would loveee to start blogging regularly. I guess with me working a full time job and doing Youtube I do find it hard to find the time to sit down and blog, but I would love love love to give the blog more TLC and also build my following here!

How To Make A Simple Snow Globe Cake!


HA! Im Just kidding guys, but seriously don’t shake it!

Today we are making this super simple easy Snow Globe Cake that will definitely impress at your Christmas get-together but is so simple and quick to throw together!

What you will need:

  • 2 6 Inch Round Cakes (In any flavor you want)
  • Green Buttercream
  • Something to put in the Snowglobe. I used Rice Crispy Trees that I made last week! You can find them HERE!
  • Fish bowl or round vase
  • Shredded Coconut


Alright guys, you are about to see just how simple this cake really is. Also feel free to add designs and as many details as you want, I just wanted this to be simple and to show you that its something literally anybody can do! So lets get started!

  1. First I stacked and filled my cake with Buttercream frosting and then gave it a thin crumb coat. Chill.
  2.  Once Chilled I took some of the green Buttercream and done my main coat of frosting which is usually a little more on the thick side.
  3. I smoothed out my buttercream smooth with my small offset spatula or you could use a bench scraper. Then I chilled it for a bit to firm it up so I didnt mess it up while doing the quick and easy decorating.
  4. Next I took my little fish bowl/globe for the top and I placed it where I wanted it. Then removed it, just so it would leave an outline where it goes.
  5. Then I took some shredded coconut and filled the  inside of the globe outline on my frosting so it would look like snow in my snow globe!
  6. Next I used a little Buttercream to attach  my Christmas tree in the center of where my globe will be. If you want to see how I made this cute Christmas Tree Rice Crispy Treat you can check that out HERE. It’s super easy and makes another cute treat to bring to the Christmas family events! (You can put a gingerbread man cookie or whatever you want in this globe!)
  7. Finally I placed the globe back ontop of the cake where I originally outlined for it to go, and you are done!
  8. Of course additional decorations and designs are completely optional!

How To Make Rice Crispy TREE Treats!

Rice Crispy Christmas Trees!

For the Rice Crispies
  1. 6 Cups Rice Crispy Cereal
  2. 10 oz. Mini Marshmallows
  3. 1/4 Cup of Butter
  4. Splash of Vanilla
  5. Green Food Coloring
For the Decoration
  1. M&M's
  2. Yellow Fondant
  3. Buttercream
  4. Reeses Miniatures
  1. Start by melting the Butter on low heat.
  2. Add Vanilla and Mini Marshmallows and continue to cook on low heat until completely melted.
  3. Once melted add the food coloring and mix thoroughly.
  4. When your marshmallow mixture is the color you want, remove from heat and mix in the rice crispy treats. ( It was easiest for me to mix in a little at a time)
  5. Let cool. (hot Rice crispy treats are super sticky, they are easier to shape when cooled.)
  6. Shape into Christmas Trees.
  7. Attach Miniature Reeses to bottom for stem using buttercream.
  8. Use Butter cream to stick a variety of colors of M&Ms to be your ornaments.
  9. Finally adorn the top with a small star cut out of yellow fondant.

How To Make A Santa Suit Pizza!

Ho Ho Ho!..oops, I mean Hey hey hey my sunny friends! I decided to veer off my normal route today and instead of making a dessert I made dinner, and one of my favorite go-to dinners-PIZZA! Me & my husband are pizza eaters for sure, we live and breath pizza! So this week I am making a standard Pepperoni Pizza, but with a Christmas twist! That’s right, a Santa Suit Pizza, or a Santa Belly Pizza…whatever you wanna call it!

DIY Christmas Snow Globe Door Hanger!


Hello my beautiful sunny friends! I am sooo excited beyond belief for this project! Here’s a little sneak peak into the life of this burst of sunshine, my husband and I collect snow globes. Not in like a weird way where we have like 100 all over the house, but when we go on trips or anytime my husband has to go out of town for work (Which isn’t too often) he brings me a snow globe home…usually representing the place he got it from in his travels. It is mainly something he really loves, he loves pretty things. So now we have a small but growing collection of snow globes that he absolutely loves to display on a little shelf in our bedroom. So I thought what better Christmas door hanger to make for our home than one of a Christmas Snow Globe! It is very US!

So, Let’s do This!

  1. First, I of course cut out my Snow Globe shape out of some plywood (same way I do with all my wood projects) 
  2. After cutting out my snow globe shape I sand it down to make the surface smooth with no jagged edges.
  3. Time to start painting. I started with the base and background of the globe. Because I did not want to leave it wooden I decided to go with a light sky blue-ish color for the globe background and a red for the base just so I know it looks extra festive for the holidays.
  4. After the base and background have dried its time to start painting the inside of my globe. I decided to go with some cute little Snowmen to represent me and my husband. Add as many details as you would like, I thought it would be cute to add snow falling and cute details all in the globe.
  5. Time for the words, I just stenciled my words “Merry Christmas” onto the base of the snow globe using the same technique I always use which is taping down my printed out words and tracing over them using firm pressure with a pen. Then when you remove the paper the words should be indented into the woods for easy tracing. Then I just painted in the lines.
  6. Finally it is time for a top coat to seal in the design. Polyurethane is a good option but I find it has been turning some of my pieces yellow, So recently I have been using Mod Podge Spray Acrylic Sealer. No matter what kind you choose to use, just seal your project in!
  7. Add a Screw to the top to hang with some ribbon!

You are Done!!!!!!

See how easy but how fun and cute! You can customize this to your own family and color scheme you want!

Update-Site Construction!

Hey guys!

I just wanted to update you guys, as you all know by now my blog isn’t exactly in the most productive state it can be in. I have been slacking off when it comes to blogging and updating my blog. It lacks in TLC so I am going to try and be better about it, so over the next couple weeks I am going to slowly work on updating the pages and the overall productivity aspect of my blog and how I share things. I apologize that I have been a slacker, but don’t leave me just yet. Hopefully you will be seeing a few subtle changes over the next period of time as I slowly overhaul certain parts of the blog!  Again Thank you guys for stopping by, don’t forget to Check out my Youtube Channel Burst of Sunshine where I will still be uploading regularly.

How To Make Pumpkin Roll Sandwiches! (& Pumpkin Roll Cake Pops)


pumpkin-roll-sandwichesWoohoo! It can official be considered holiday season! Thanksgiving is less than a week away and no one is more excited then THIS GIRL! I LOVEE Thanksgiving (AND CHRISTMAS). However I thought I would switch it up with desserts this Thanksgiving and experiment with something alittle different. Every year around the Holidays me, my sister, and my grandmother get together and make all kinds of candy-including Pumpkin Roll. So I decided to try and do a twist on the traditional Pumpkin Roll and try to deconstruct it in a cute way!


I have made these cute Pumpkin Shaped Pumpkin Roll Sandwiches! They are delicious, and taste just like Pumpkin Rolls but they are sooo cute and simple to make. While not trying to be wasteful I took the scraps of cake left over from the actual roll batter that I cut out and crumbled it to make some delicious little Pumpkin Roll bites of goodness!

So Today this is not only one recipe-but two! So as always you can watch the video I have provided for you from my Youtube Channel ‘Burst of Sunshine’ or you can find the recipe below!

Pumpkin Roll Sandwiches & Cake Pops
Yields 6
This is a delicious new twist on your average pumpkin roll! This recipe makes 6 Sandwiches and 10 Cake pops!
Write a review
For the Batter
  1. 3 eggs
  2. 1 cup of sugar
  3. 1 cup of canned pumpkin
  4. 1 teaspoon lemon juice
  5. 3/4 cup flour
  6. 1 teaspoon baking soda
  7. 2 teaspoons cinnamon
  8. 1/2 teaspoon nutmeg
  9. 1 teaspoon ginger
For the Filling
  1. One 8 oz. package of cream cheese
  2. 2 tablespoons of softened butter
  3. 1 cup powdered sugar
  4. 1 teaspoon vanilla
For the Pumpkin Roll Sandwiches
  1. In a large bowl, beat eggs and sugar. Then mix in pumpkin and lemon juice.
  2. In another bowl whisk together the flour, baking soda, cinnamon, nutmeg, and ginger.
  3. Combine the dry ingredients into the wet ingredient mixture and mix until fully incorporated and to a cake batter consistency.
  4. Grease a 15 inch baking pan with some cooking spray, cover with wax paper, spray it again with spray, and dust a light layer of flour.
  5. Pour the batter into the pan and smooth evenly.
  6. Bake for 13-15 minutes on 350 degrees Fahrenheit.
  7. While cake is baking prepare for the next step by laying out some aluminum foil, and then some wax paper.
  8. Sift powdered sugar onto surface.
  9. Once cake comes out of oven, while it is still hot flip it onto the powdered sugar.
  10. Sift a layer of powdered sugar on top of the cake, cover with another piece of wax paper and aluminum foil and freeze.
  11. Once cake is completely cooled almost frozen, use a Pumpkin Shaped Cookie Cutter to cut out 12 pumpkins from the cake!
For the Filling
  1. Beat together butter and cream cheese until smooth.
  2. Add Vanilla and powdered sugar and mix until creamy and smooth.
To Assemble The Pumpkin Roll Sandwiches
  1. Using a piping bag and size 1A piping tip spread filling ontop of a pumpkin that you cut out.
  2. Top with another pumpkin cake.
For the Cake Pops
  1. Crumble leftover pieces and scraps of cake from cutting out the pumpkin shapes in crumbs in a mixing bowl.
  2. Mix in some of the filling until it gets to a thick dough consistency.
  3. Once it is to the consistency you like, roll it into a ball.
  4. Top with extra filling & crumbs for garnish. (Optional)

How To Make A Buttercream Paw Patrol Cake!


Hey guys, its your own personal Burst of Sunshine here! I’m here today ready to show you a new cake that I made for an adorable little Paw Patrol fan! This is a super simple buttercream cake that is perfect for a kids party at any age. Because it was buttercream and not all fondant it was a huge hit with the kids, especially since fondant is a hard sell on some people.
I did not write out a full blog post on this cake because it would be extremely long, so it would save me and you both time if you just checked out the Youtube video I made on my channel “Burst of Sunshine” to see exactly how I made this cake step by step.

DIY Wooden Deer Sign


Welcome back Sunshine! Today, we are veering off my normal path of making treats and cakes to do a little work with wood! For todays project I am making a deer head out of wood! A sign to be specific. This is not a hard project at all and it will get tons of raves and reviews, so lets just do this!

I do not have a picture tutorial for this cutout due to having a busy work week with Halloween and everything going on, but feel free to watch my Youtube Video which shows me making this Deer head below!
